Greek Cucumber Rolls

Enjoy traditional Greek flavours in these bite-sized rolls. Quick and easy to make, these impressive looking rolls are great as an appetizer or a snack.
Ingredients
4 Mucci Farms Mini Cucumbers
¼ cup finely minced Mucci Farms Orange Bell Pepper
¼ cup finely minced Mucci Farms Grape Tomatoes
½ small ripe avocado
½ cup crumbled feta
3 tbsp. finely minced red onion
2 tbsp. finely minced Kalamata olives
2 tbsp. chopped fresh oregano
1 tbsp. lemon juice
½ tsp. lemon zest
Directions
Using a mandolin slicer, peeler or chef knife, slice cucumber lengthwise into thin ribbons. In a medium bowl, mash avocado with a fork; stir in feta, pepper, tomatoes, onion, olives, oregano, lemon juice & zest.
Place 1 tbsp of filling at one end of cucumber slice and roll up securing with a toothpick.
Repeat with remaining slices.
Garnish with fresh oregano leaves if desired.
