fresh cucumber and pepper bruschetta

A unique and colourful appetizer that’s easy to prepare and bursting with fresh flavours. Makes a great snack, appetizer or side dish.

Ingredients

10 Mucci Farms Mini Cucumbers,
  cut into small cubes

10 Bella Sweets™ Super Sweet Mini
  Peppers, cut into small cubes

4 tbsp. extra-virgin olive oil

1 small Italian baguette

1 clove of garlic

Juice of a ½ lemon

2 sprigs of thyme

Sea salt and pepper,
  to taste

 

Directions

· Pre heat oven to 350 ºF (176 ºC). Cut Italian baguette in half and rub with
  garlic clove. Place loaf into oven for approximately 5-6 minutes. Remove
  and let cool.

· In a bowl, mix your cut cucumbers and peppers, along with the lemon
  juice, thyme leaves and extra-virgin olive oil.

· Add sea salt and pepper to taste, then place on top of the roasted
  Italian baguette.

· Serve at room temperature.
