Fresh Roasted Red Peppers

Great on it’s own, in sandwiches, or salads, roasted red peppers add flavour to your favourite dish that can’t be beat!

Ingredients

6 large red Mucci Farms Sweet Bell Peppers

½ cup extra-virgin olive oil

4 garlic cloves, minced

1 tbsp. chopped parsley

Salt and pepper, to taste

Directions

· Preheat broiler or grill. Cook whole peppers over high heat until they have
  blackened spots, blisters, and are tender.

· Place the peppers in a brown paper bag and roll down the top to seal
  close to the peppers. Set aside until peppers are cool.

· When the peppers are cool, remove the skins. Slice the peppers open and
  scrape out the cores and seeds. Rinse under water quickly and dry well with
  paper towels. Cut into strips or halves.

· Place cut pepper strips in mixing bowl; add your chopped garlic, hand torn
  or chopped parsley, extra-virgin olive oil, sea salt and pepper; toss until
  thoroughly mixed. Let stand and serve cold or at room temperature.
