veggie bouquet salad

This salad is sure to please! A fresh medley of crisp vegetables tossed in a homemade dressing , it’s just as tasteful as it is colourful!

1 Rustico™ Sweet Long Pepper,

1 lb Sapori™ Sweet Cocktail
  Tomatoes, quartered

1 package (6ct) Mucci Farms
  Mini Cucumbers

½ cup crumbled feta cheese,


¼ clove garlic, minced fine

½ sprig rosemary, chopped fine

¼ cup white or red balsamic

Sea salt and pepper, to taste

1 orange Mucci Farms Sweet Bell
  Pepper, chopped

1 yellow Mucci Farms Sweet Bell
  Pepper, chopped

1(20 oz) can chickpeas,
  strained and rinsed

½ cup sliced black olives


½ shallot, minced fine

1 tsp. grainy mustard

1½ tsp. honey

¾ cup blended oil
  (50% olive 50% canola)


· Combine all dressing ingredients and blend using handheld
  immersion blender.

· Chill dressing mixture.

· Chop all produce and add to chickpeas and black olives.

· Pour dressing mixture over salad content and mix thoroughly.

· Season with sea salt and black pepper to taste.

· Top with feta cheese and garnish with parsley leaves.
