¾ cup Mucci Farms Naked Leaf
5 cloves garlic
2 tsp. kosher salt
¾ cup red wine
½ cup grated parmesan
1 large onion, peeled
2 tbsp. olive oil
2 tsp. black pepper
· Quarter onion; toss with tomatoes, garlic cloves, oil, salt and pepper.
· Grill on charcoal barbecue until tender and charred. Let sit until cool
enough to handle. Remove tomato skins and add with onion and garlic
into a blender or food processor and blend into a chunky sauce.
· Pour into sauce pot; add wine and simmer over medium high heat for
30 minutes. Garnish with fresh basil and Parmesan.
· Serve with your favourite pasta.
