Tomato Brushcetta

A simple recipe to make, Tomato Bruschetta is a wonderful way to capture the flavours of our Tomatoes on the Vine. A healthy snack alternative to chips, dips and other deep fried foods.

4 Mucci Farms Tomatoes on the Vine, diced

¼ Mucci Farms Naked Leaf Living Basil, sliced

½ cup extra-virgin olive oil

½ cup shredded Parmesan cheese

¼ red onion, chopped

1 baguette

2 garlic cloves

Salt and pepper, to taste


· Preheat oven to 400 º F (204 º C), then cut bread diagonally into ¾”
  (1.1 cm) pieces.

· Crush 2 cloves of garlic into a small bowl with ¼ cup of extra-virgin olive oil. 

· Brush onto top side of bread.

· Toast in oven approximately 3 – 4 minutes on first side, turn over onto
  second side for approximately 2 minutes.

· Mix tomatoes, onion and basil in bowl, add remaining olive oil and salt
  and pepper to taste.

· When ready to serve, place mixture on toasted bread and add shredded
  Parmesan cheese.
