2.5 lb (1.13 kg) Mucci Farms Sano™ Baby Roma Tomatoes
¾ cup Mucci Farms Naked Leaf Living Basil leaves
5 cloves garlic
2 tsp. kosher salt
¾ cup red wine
½ cup grated parmesan
1 large onion, peeled
2 tbsp. olive oil
2 tsp. black pepper
Quarter onion; toss with tomatoes, garlic cloves, oil, salt and pepper.
Grill on charcoal barbecue until tender and charred. Let sit until cool enough to handle. Remove tomato skins and add with onion and garlic into a blender or food processor and blend into a chunky sauce.
Pour into saucepot. Add wine and simmer over medium-high heat for 30 minutes. Garnish with fresh basil and Parmesan.
Serve with your favourite pasta.
