Pasta Sauce

Charcoal grilled tomatoes infuse this simple, fresh pasta sauce with smoky earthiness.

  • 2.5 lb (1.13 kg) Mucci Farms Sano™ Baby Roma Tomatoes

  • ¾ cup Mucci Farms Naked Leaf Living Basil leaves

  • 5 cloves garlic

  • 2 tsp. kosher salt

  • ¾ cup red wine

  • ½ cup grated parmesan

  • 1 large onion, peeled

  • 2 tbsp. olive oil

  • 2 tsp. black pepper

  • Quarter onion; toss with tomatoes, garlic cloves, oil, salt and pepper.

  • Grill on charcoal barbecue until tender and charred. Let sit until cool enough to handle. Remove tomato skins and add with onion and garlic into a blender or food processor and blend into a chunky sauce.

  • Pour into saucepot. Add wine and simmer over medium-high heat for 30 minutes. Garnish with fresh basil and Parmesan.

  • Serve with your favourite pasta.
