1½ cups diced Mucci Farms Tango Pink Roma Tomatoes
1½ pineapple, cored, peeled and sliced into ½” (1.27 cm) rings
1 tbsp. plus 2 tsp. olive oil
½ cup cooked black beans
¼ cup chopped cilantro
½ cup minced onion
2 tbsp. lime juice
2 tbsp. minced jalapeño
1 tbsp. maple syrup
2 tsp. curry powder
1 tsp. minced garlic
Toss pineapple rings with 2 tsp. oil and grill on charcoal barbecue until golden and lightly charred.
Dice pineapple and toss with remaining ingredients.
Serve with tortilla chips or pita chips.
Also delicious with grilled chicken, pork, fish and seafood.
