Grilled Pineapple

& Tomato Salsa

This refreshing and sweet salsa is perfectly balanced with citrus, spice and grilled flavours.

  • 1½ cups diced Mucci Farms Tango Pink Roma Tomatoes

  • 1½ pineapple, cored, peeled and sliced into ½” (1.27 cm) rings

  • 1 tbsp. plus 2 tsp. olive oil

  • ½ cup cooked black beans

  • ¼ cup chopped cilantro

  • ½ cup minced onion

  • 2 tbsp. lime juice

  • 2 tbsp. minced jalapeño

  • 1 tbsp. maple syrup

  • 2 tsp. curry powder

  • 1 tsp. minced garlic

  • Toss pineapple rings with 2 tsp. oil and grill on charcoal barbecue until golden and lightly charred.

  • Dice pineapple and toss with remaining ingredients.

  • Serve with tortilla chips or pita chips.

  • Also delicious with grilled chicken, pork, fish and seafood.
