Thai Bruschetta

A modern Asian twist to an old classic using Thai ingredients to bring out the sweet and juicy flavours of the Pink Romas.

1 lb (454 g) Mucci Farms
  Tango Pink Roma Tomatoes

¼ cup Mucci Farms Naked
  Leaf Living Basil, chiffonade

¼ cup mint, chiffonade

2 tbsp. lemongrass,
  sliced paper thin

2 tbsp. olive oil

2 tbsp. honey

1 tbsp. lime juice

1 tbsp. fish sauce

1 tsp. sambal chili sauce

¾ cup diced papaya

1 shallot, thinly sliced

¼ cup crispy fried onion

¼ cup crushed peanuts

2 baguettes, thinly sliced
  and toasted


· In a large bowl whisk together basil, mint, lemon grass, oil, honey, lime juice,
  fish sauce, and sambal. Quarter tomatoes then thinly slice crosswise.

· Add tomatoes, papaya, and shallot to bowl stirring to combine.

· Serve on toasted baguette slices garnished with fried onions and peanuts.
