Basil Pesto Mayo:
1 cup loose packed Mucci Farms Living Basil leaves
½ cup mayonnaise
2 tbsp lemon juice
2 tbsp pine nuts
1 tbsp grated parmesan
1 clove garlic
4 burger buns of choice, cut in half
4 turkey burger patties
1 cup shredded romaine or iceberg lettuce
2 Mucci Farms Beefsteak Tomatoes, sliced
1 x 125g fresh mozzarella ball, cut into 8 slices
1 cup loose packed basil leaves
Salt and Pepper to taste
Place basil, mayonnaise, lemon juice, pine nuts, parmesan, and garlic in a blender cup and blend with a hand immersion blender until puréed.
Lightly spread each cut side of buns with basil pesto mayo. Grill cut sides on high over a preheated grill for about 2 minutes or until toasted. Remove to a platter.
Grill turkey patties on medium high for 5 minutes per side or until cooked through.
Place ¼ cup shredded lettuce on each bottom bun; top with grilled patties, 2 slices each tomato and mozzarella. Season with salt and pepper and garnish with basil leaves.
Serve burgers with remaining basil pesto mayo.
