Beefsteak Turkey Sandwich

The lemony and creamy basil pesto enhances the flavours of the juicy beefsteak tomatoes for a satisfying flavourful burger that is sure to become a quick favourite.

  • Basil Pesto Mayo:

  • 1 cup loose packed Mucci Farms Living Basil leaves

  • ½ cup mayonnaise

  • 2 tbsp lemon juice

  • 2 tbsp pine nuts

  • 1 tbsp grated parmesan

  • 1 clove garlic

  • Other Ingredients:

  • 4 burger buns of choice, cut in half

  • 4 turkey burger patties

  • 1 cup shredded romaine or iceberg lettuce

  • 2 Mucci Farms Beefsteak Tomatoes, sliced

  • 1 x 125g fresh mozzarella ball, cut into 8 slices

  • 1 cup loose packed basil leaves

  • Salt and Pepper to taste

  • Place basil, mayonnaise, lemon juice, pine nuts, parmesan, and garlic in a blender cup and blend with a hand immersion blender until puréed.

  • Lightly spread each cut side of buns with basil pesto mayo. Grill cut sides on high over a preheated grill for about 2 minutes or until toasted. Remove to a platter.

  • Grill turkey patties on medium high for 5 minutes per side or until cooked through.

  • Place ¼ cup shredded lettuce on each bottom bun; top with grilled patties, 2 slices each tomato and mozzarella. Season with salt and pepper and garnish with basil leaves.

  • Serve burgers with remaining basil pesto mayo.
