Hearty Roasted Berry

& Farro Salad

Roasting the berries releases their sweet juices into the vinaigrette making for a nice balance of sweet and salty. A perfect hearty and warming salad on a cold day.

  • 1 cup Mucci Farms Smuccies™ Strawberries, halved

  • 1 cup Mucci Farms Smuccies™ Blackberries

  • 2 tbsp lime juice, about 1 large

  • 2 tbsp olive oil

  • 2 tbsp honey

  • 1 tbsp sherry vinegar

  • 2 tsp dijon

  • ½ tsp cornstarch

  • Salt and Pepper

  • 2 cups Watercress

  • 2 cups Mucci Farms Naked Leaf Living Lettuce

  • 4 cups warm cooked Farro

  • ½ cup diced Brie cheese

  • ¼ cup capers

  • Preheat oven to 400°F

  • In a baking dish, combine strawberries, blackberries, lime juice, oil, honey, vinegar, dijon, cornstarch and salt and pepper to taste. Roast for 10-12 minutes.

  • Meanwhile, arrange watercress, lettuce, farro, brie and capers in a large shallow bowl or platter.

  • Top salad with hot roasted berries and drizzle with glaze.
