Blackberry Arugula Salad

Our extra large juicy and sweet Smuccies™ Blackberries marry well with the crisp salty pancetta and peppery arugula.

  • 4 cups Arugula

  • 2 cups Mucci Farms Smuccies™ Blackberries

  • 8-10 slices pancetta, cooked crisply and broken

  • ½ cup shaved Manchego cheese

  • ¼ cup thin sliced red onion

  • Blackberry Balsamic Dressing:

  • ¼ cup olive oil

  • 8 Mucci Farms Blackberries

  • 2 tbsp balsamic vinegar

  • 2 tbsp water

  • 2 tsp dijon

  • 2 tsp maple syrup

  • salt and pepper to taste

  • In a large shallow bowl or platter, layer arugula, blackberries, pancetta, manchego and onion.

  • In a deep blender cup, add oil, blackberries, vinegar, water, dijon, maple syrup, and salt and pepper. Blend with a hand/immersion blender until emulsified. Strain out any blackberry seeds if desired.

  • Serve salad drizzled with dressing.
