10 Mucci Farms Mini Cucumbers, cut into small cubes
10 Bella Sweets™ Super Sweet Mini Peppers, cut into small cubes
4 tbsp. extra-virgin olive oil
1 small Italian baguette
1 clove of garlic
Juice of a ½ lemon
2 sprigs of thyme
Sea salt and pepper, to taste
Pre heat oven to 350 ºF (176 ºC). Cut Italian baguette in half and rub with garlic clove. Place loaf into oven for approximately 5-6 minutes. Remove and let cool.
In a bowl, mix your cut cucumbers and peppers, along with the lemon juice, thyme leaves and extra-virgin olive oil.
Add sea salt and pepper to taste, then place on top of the roasted Italian baguette.
Serve at room temperature.
