Simple Roasted Tomatoes

This simple and healthy dish is great when shared with a table set for 10, or enjoyed in the kitchen alone after a busy day.

  • 30 Mucci Farms Sapori™ Sweet Cocktail Tomatoes

  • ½ cup Mucci Farms Naked Leaf Living Basil

  • 4 garlic cloves, skin on

  • 2½ tbsp. olive oil

  • ½ cup panko breadcrumbs

  • ½ cup Parmesan cheese, grated

  • 3 anchovies

  • 1 lb (454 g) spaghetti

  • Pepper. to taste

  • On a rimmed baking sheet, toss tomatoes with 1 tbsp. oil and garlic. Roast at 275 ºF (135 ºC) for 2 hours. Toast breadcrumbs with ½ tbsp. oil until golden brown. Let cool and mix in Parmesan, then set aside.

  • Remove skins from garlic and sauté in a large pan over high heat with 1 tbsp. oil, half of tomatoes and anchovies. Break up any large chunks to make a quick sauce, and reduce to simmer.

  • Meanwhile, cook spaghetti to al dente. Toss into sauce along with basil to coat.

  • Serve topped with panko Parmesan mix and pepper to taste.
