Grilled Mini Pepper Skewers with Chunky Tapenade

These no-fuss sweet seedless peppers grill up quickly for a perfect side to grilled meats. Make extra grilled pepper to level-up sandwiches spread with the chunky tapenade.

Ingredients

  • ¼ cup minced Kalamata olives

  • ¼ cup minced green olives

  • Juice of 1 lemon

  • 2 tbsp olive oil

  • 1 tbsp maple syrup

  • 1 clove garlic, minced

  • 2 tsp each fresh oregano and thyme leaves

  • 1 lb Mucci Farms Seedless Sweet Peppers, halved

  • Wooden or metal skewers

  • Olive oil

  • Salt and pepper to taste

Directions

  • In a small bowl, combine olives, lemon juice, oil, maple syrup, garlic, oregano, thyme, and pepper.

  • Thread halved peppers onto skewers. Brush liberally with olive oil and season with salt and pepper.

  • Grill peppers over high heat for 1-2 minutes on each side or until just softened.

  • Serve grilled peppers with chunky tapenade.
