Thai Peanut Cucumber Salad

Cool crisp cucumbers and roasted peanuts deliver satisfying crunch coated in classic spicy Thai flavours. Make it a meal with grilled shrimp or shredded chicken.
Ingredients
Chili Lime Vinaigrette:
2 tbsp rice vinegar
2 tbsp lime juice
1 tbsp fish sauce
1 tbsp maple syrup
1 tbsp olive oil
2 tsp sesame oil
1 clove garlic, minced
1-2 thai chili, thinly sliced
½ tsp kosher salt
Other Ingredients:
6 Mucci Farms Mini Cucumbers, thinly sliced
⅓ cup thinly sliced red onion
¼ cup crushed roasted peanuts
½ cup Mucci Farms Living Basil
⅓ cup mint leaves
Directions
In a small bowl, whisk together vinegar, lime juice, fish sauce, maple syrup, olive oil, sesame oil, garlic, sliced chili and salt.
Layer sliced cucumber, red onion, peanuts and basil and mint in a large shallow bowl or platter.
Drizzle with vinaigrette.
