Grilled Mini Zucchini

with Lemon & Herbs

Mucci’s mini zucchini are firmer and sweeter than most and that means they hold their shape and take on the flavour of any seasoning you want to try. Adding this dressing while the slices are still hot off the grill, intensifies the herbs and lemon zest making this recipe great to serve along grilled meats and seafood.
  • 6  whole Mucci mini zucchini

  • Olive oil for grilling

  • 1 clove garlic, finely chopped

  • 1 small lemon, juiced (zest reserved)

  • 1 tsp. Dijon mustard

  • 1 tsp. finely chopped fresh thyme

  • ½ tsp. salt

  • ½ tsp. freshly ground pepper

  • ½ cup extra virgin olive oil

  • **Optional – pinch of dried red chili flakes

  • Slice zucchini ¼” thick, lengthwise.

  • Lightly brush each side of the zucchini to prevent sticking to grill.

  • Mix all remaining ingredients together and set aside.

  • Preheat bbq to 350º (or grill pan on medium high heat).

  • Line up slices directly on grill.

  • Grill 2-3 minutes per side or until grill marks are visible.

  • Place grilled zucchini slices on a platter and while hot, drizzle with Lemon and Herb dressing and serve.

  • **Sprinkle with chili flakes to taste.
