10 Mucci Farms Bella Sweets™ Super Sweet Mini Peppers
100 g (3.5 oz) pancetta, finely diced
¼ cup finely minced onion
200 g (7 oz) goat cheese
1 cup finely chopped asparagus
½ tsp. pepper
¼ tsp. sea salt
2 tbsp. honey
Slice peppers in half lengthwise; remove seeds and inner ribs. Arrange peppers cut side up on a baking sheet and spray baking sheet lightly with cooking spray. In a small pan over medium high heat, sauté pancetta and onion until golden and onions have softened.
Transfer to a medium bowl. Stir in cheese, asparagus, pepper and salt.
Bake at 400 °F (204 °C) for 15-20 minutes until light and golden.
Let cool for 5 minutes.
Drizzle with honey before serving.
