Goat Cheese Stuffed

Mini Peppers

These easy-to-make, 2-bite stuffed mini peppers are a perfect combination of salty and sweet filling that requires little prep work for big flavour.

  • 10 Mucci Farms Bella Sweets™ Super Sweet Mini Peppers

  • Cooking spray

  • 100 g (3.5 oz) pancetta, finely diced

  • ¼ cup finely minced onion

  • 200 g (7 oz) goat cheese

  • 1 cup finely chopped asparagus

  • ½ tsp. pepper

  • ¼ tsp. sea salt

  • 2 tbsp. honey

  • Slice peppers in half lengthwise; remove seeds and inner ribs. Arrange peppers cut side up on a baking sheet and spray baking sheet lightly with cooking spray. In a small pan over medium high heat, sauté pancetta and onion until golden and onions have softened.

  • Transfer to a medium bowl. Stir in cheese, asparagus, pepper and salt.

  • Bake at 400 °F (204 °C) for 15-20 minutes until light and golden.

  • Let cool for 5 minutes.

  • Drizzle with honey before serving.
