Tabbouleh Salad

These tasty little cucumbers are the perfect bite-sized juicy crunch to this healthy zesty salad.

  • 4 cups curly parsley, stems removed and coarsely chopped

  • 2 cups cooked bulgur wheat, cooked and cooled

  • 9 oz (255g) pint Mucci Farms Cutecumber Poppers, halved lengthwise

  • 8 Mucci Farms Sapori Sweet Cocktail Tomatoes On-The-Vine, quartered

  • 1 cup packed coarsely chopped mint

  • ¼ small red onion, sliced

  • ¼ cup olive oil

  • 2 tbsp lemon juice

  • 1 clove garlic, minced

  • 1 tsp sumac

  • ½ tsp each salt and pepper

  • ¼ tsp each cumin and allspice

  • In a large shallow bowl, place parsley, bulgur wheat, Cutecumber halves, tomatoes, mint, and red onion.

  • In a small bowl, whisk olive oil, lemon juice, garlic, sumac, salt, pepper, cumin and allspice.

  • Toss salad with dressing just before serving.
