Sweet Summer Rolls

These sweet summer rolls are great for light lunches and appetizers. Packed with fresh produce they’re a healthy choice too!

  • 6 Mucci Farms Sweet to the Point™ Mini Pointed Peppers

  • ¼ cup Mucci Farms Naked Leaf Living Basil leaves

  • 2 Mucci Farms Mini Cucumbers

  • 1 oz bean thread noodles

  • ¼ cup fresh mint leaves

  • 1 tbsp. seasoned rice vinegar

  • ½ cup thinly sliced Napa cabbage

  • 4 (8”) rice-paper rounds

  • ¼ cup fresh cilantro leaves

  • ½ cup coarsely shredded carrot

  • Cover noodles with boiling hot water and soak for 15 min., drain well in a sieve. Pat dry between paper towels, and toss with vinegar and salt to taste.

  • Soak 1 rice-paper round in warm water until pliable, 30 seconds to 1 minute, then transfer to paper towels.

  • Place 1 piece of lettuce on bottom half of rice paper, leaving a 1” border along edge. Top with mint, basil, peppers, cucumbers, cabbage, and noodles.

  • Roll rice paper tightly around filling and, after rolling halfway, arrange one fourth of cilantro and carrot along crease. Then fold in sides and continue rolling.
