Pesto Bites

Small in size but big in taste, these bite-sized wonders are simply irresistible. Stuffed with a delicious pesto filling, they are as easy to make, as they are delicious.

  • 36 - 48 Mucci Farms Tomato-X Tomatoes

  • 2 fresh bunches of Mucci Farms Naked Leaf Living Basil

  • 1 fine minced clove of garlic (medium size)

  • 6 tbsp. extra-virgin olive oil

  • ¼ cup fresh grated parmesan cheese

  • Ground black pepper and sea salt to taste

  • In a food processor; add all items including basil leaves (please omit any stems even if they are small). Use the “pulse” feature and keep using until all items are blended together. 

  • Finish with extra virgin olive oil and use pulse until all items have been blended. 

  • Using a small spoon or melon baller, carefully hollow out each tomato.

  • Place tomatoes aside. With a pastry bag, pipe the pesto mixture into the cherry tomatoes.

  • Add salt and pepper to taste.
