2 cups Mucci Farms Blended Flavors™ Tomatoes, halved
1 cup Mucci Farms Smuccies™ Sweet Strawberries, sliced
3 Mucci Farms CuteCumbers™ Snack-Sized Cucumbers quartered and diced
¼ cup thinly sliced red onion
¼ cup fresh basil leaves, roughly chopped
¼ cup whole fresh mint leaves
½ cup crumbled goat cheese
¼ cup toasted pine nuts
MINT & BASIL VINAIGRETTE:
1 clove garlic, finely grated or chopped
2 tsp. Dijon mustard
½ tsp. coarsely ground black pepper
¼ tsp. salt
1 tsp. liquid honey
¾ cup extra virgin olive oil
Combine tomatoes, strawberries, cucumbers, red onion, basil and mint leaves in medium sized bowl.
Whisk together dijon mustard, olive oil, honey, garlic, salt and pepper. Toss with vinaigrette to taste.
Sprinkle with goat cheese and toss gently.
Finish with toasted pine nuts, sprinkled over top and serve.
