10 Mucci Farms CuteCumbers™ Snack-Sized Cucumbers, halved lengthwise and sliced
1½ cups Mucci Farms Sun Drops™ Sweet Grape Tomatoes, halved
1½ cups watermelon, cubed
½ cup Chèvre goat cheese
2 tbsp. olive oil
¼ cup lime juice
2 tbsp. honey
1 tbsp. Dijon mustard
½ tsp. pepper
¼ tsp. salt
1 bunch fresh mint, finely chopped or torn
In a large bowl, combine cucumbers, tomatoes, watermelon and Chèvre goat cheese.
Whisk together oil, lime juice, honey, Dijon mustard, salt and pepper.
Pour dressing over salad and toss before serving.
